We all scream for Seattle Cookie Counter's luscious ice cream sandwiches

After one too many disappointing visits to traditional ice cream trucks, West Seattle couple and longtime vegans Chelsea Keene and Chris Olson decided they should just start their own. The result: Seattle Cookie Counter, the area's first dairy-free ice cream truck.

Buoyed by a successful Kickstarter fundraiser (check out their campaign video), the duo and their 12-year-old son, Malachy, hit the streets this summer in a blue 1974 Volkwagen bus, peddling luscious, creamy vegan ice cream sandwiches in classic combos and exotic flavor variations (think peach basil sandwiched between coconut lime cookies and chocolate chip cookies with chai).

Their homemade, coconut-based ice cream comes in 18 flavors. Add 12 different homemade vegan cookie varieties (including several gluten-free options) and you've got yourself a party: one that's enjoyable for everyone, including soy-free, dairy-free, egg-free, corn-free, and even tree nut-free friends. The family is thrilled by the truck's instant following, especially kids with allergies now able to buy treats from an ice cream truck for the first time.

"A little girl came up and gave Chelsea a huge hug after she enjoyed her sandwich," Olson recalled. "They get so excited."
