Seattle Cookie Counter is aiming to set up a brick-and-mortar of its own

This beloved vegan ice cream truck is raising funds to set up shop.

 

Seattle vegan ice cream sandwich truck Seattle Cookie Counter is a seriously sweet source for lovely vegan ice cream and cookies. Their charming truck appears at tons of local events and offers old-fashioned ice cream sandwich goodness for folks who are dairy-free or gluten-free. 

To expand their reach beyond the truck, Seattle Cookie Counter is hoping to set up a brick-and-mortar. After two summers of running the truck, they're ready to set up shop and expand their repertoire: they plan to serve homemade plant-based milk lattes, french press, hand pies, gluten-free tarts, breakfast cookies and biscotti, in addition to their cookies and ice cream sandwiches.

Seattle Cookie Counter's Kickstarter fund hopes to raise the necessary $40K in startup costs they'll need to get their shop up and running. In addition to setting up a shop, Seattle Cookie Counter plans to keep their beloved truck, running it in the summer months. They've raised just over $3,500 so far through their Kickstarter.
