The Make-Ahead Mamas, a group of North Seattle moms, gathered every two months to mass-prepare ready-to-go meals. Here are two of their favorites:
Beef Bulgogi
Prep Time: 10 Minutes
Cook Time: 5 Minutes
Ready In: 1 Hour 15 Minutes
Servings: 4
INGREDIENTS:
1 pound flank steak, thinly sliced
5 tablespoons soy sauce
2 1/2 tablespoons white sugar
1/4 cup chopped green onion
2 tablespoons minced garlic
2 tablespoons sesame seeds
2 tablespoons sesame oil
1/2 teaspoon ground black pepper
DIRECTIONS:
1. Place the beef in a shallow dish. Combine soy sauce, sugar, green onion, garlic, sesame seeds, sesame oil, and ground black pepper in a small bowl. Pour over beef. Cover and refrigerate for at least 1 hour or overnight.
2. Preheat an outdoor grill for high heat, and lightly oil the grate.
3. Quickly grill beef on hot grill until slightly charred and cooked through, 1 to 2 minutes per side.
Connie's Zucchini ‘Crab' Cakes
Prep Time: 20 Minutes
Cook Time: 10 Minutes
Ready In: 30 Minutes

INGREDIENTS:
2 1/2 cups grated zucchini
1 egg, beaten
2 tablespoons butter, melted
1 cup bread crumbs
1/4 cup minced onion
1 teaspoon Old Bay Seasoning™
1/4 cup all-purpose flour
1/2 cup vegetable oil for frying
DIRECTIONS:
1. In a large bowl, combine zucchini, egg, and butter or margarine. Stir in seasoned crumbs, minced onion, and seasoning. Mix well.
2. Shape mixture into patties. Dredge in flour.
3. In a medium skillet, heat oil over medium high heat until hot. Fry patties in oil until golden brown on both sides.
